Crispy Chicken strips
Chicken strips are one of those foods that are loved by most people, and are fun to eat out. But if you happen to have children at home, then they are especially fun to make at home. I have been trying to come up with a version that is very crispy on the outside and very tender on the inside and l am proud to say that I have finally succeeded! I have my very picky 13 year old who can testify to that :)
Ingredients
2 pounds boneless chicken breasts
4 C buttermilk
2 tbsp. frank’s hot sauce
1 tsp. cornstarch
2 C AP flour
2 tsp. kosher salt
1 tsp cajun spice
1/2 tsp. garlic powder
1/2 tsp. onion powder
1/8 tsp baking powder
2 L eggs
3 C canola oil for frying
Directions
Cut chicken breast into strips, and make sure you cut against the grain of the breast.
Place strips in 2 cups of buttermilk and add the hot sauce and marinade for no more than 1 hour in fridge.
Take chicken out of fridge, discard the buttermilk mixture, add the cornstarch and mix it thoroughly with the strips.
Prepare another bowl with the remaining buttermilk.
Mix the flour with the salt, the rest of the spices and the baking powder in another bowl.
Mix the two eggs in a third bowl.
Dip each strip in buttermilk, then flour, then egg, and then back into the flour.
Place in the hot oil for 6-7 minutes or until chicken is fully cooked on the inside.
Enjoy with honey mustard sauce or ranch dressing!!!
