Chicken Shawarma
Ingredients
2 pounds boneless chicken breasts about 6 ounces each
1 Cup Plain yogurt
1/4 Cup olive oil
1/2 Cup garlic sauce (found in middle eastern markets and some grocery stores)
1 Tablespoon crushed garlic
1 Tablespoon shawarma spice (found in middle eastern stores and at Walmart)
Salt and pepper
vegetable oil
Condiments: ( Saj bread, pita bread or any wrap bread you like), garlic sauce (1/4 cup), cucumber pickles “Kabeese”, shredded lettuce (1 cup), and French fries.
Directions
Marinate the chicken in yogurt, olive oil, garlic sauce, crushed garlic, shawarma spice, salt and pepper, preferably overnight or an hour before cooking.
preheat the oven to 375F or 180C.
Discard marinade and dry each chicken piece with paper towels.
Bring an oven proof skillet like an iron skillet on medium high heat, grease the surface with some vegetable oil till hot.
Place each chicken piece smooth side down on skillet, make sure each piece touches the skillet, you might have to do this step in two stages so as not to over crowd the skillet.
Grill chicken for 3-4 minutes on each side.
Cover the skillet with aluminum foil and place in the preheated oven for 12 minutes.
Take out of the oven and test to see if chicken is done by inserting a knife in the middle of breast, it should all be white. let chicken rest in skillet for 15 minutes minimum.
Slice chicken against the grain into thin strips.
Get the flat bread of your choice and flatten it on a clean surface, place 2 tablespoons of garlic sauce on the end third of the bread that is closest to you, top with lettuce, chicken pieces, pickles and french fries. Roll the bread with all the stuffing inside it bringing the two side parts of the bread in.
