Mjaddaret Riz (lentils with rice)

Ingredients

  • 1 C brown lentils not the small ones

  • 3/4 C Egyptian rice

  • 2 onions chopped into thin wedges

  • 1/2 C vegetable oil

  • salt to taste

Directions

  1. In a medium pot, add the lentils and fill with water up to one inch over and Brin g to boil, lower heat and simmer for 15 minutes or till the lentils are soft but still hold their shape.

  2. Soak rice in cold water for 20 minutes, then drain rice and wash well a couple of times, drain the water through a colander then add to the lentils. Season with salt. the lentils should have some water left about 11/2 cups, cover and let cook together for 20. minutes or till rice is cooked.

  3. 3 fry the onions in the hot oil till the become golden brown to brown.

  4. Place on paper towels to dry the onions from the oil.

  5. Serve the lentils and rice “mjaddarat riz” in a large platter and garnish with the onions.

  6. salad and yogurt are recommended with this dish.
